We built the Crepe Delicious unit in the food court at Menlo Park Mall in Edison. The work ran inside an operating mall, to the franchise's standard drawings, and the unit was ready for the health inspector on opening day.

What the job involved
Crepe Delicious is a mall creperie serving sweet and savoury crepes, panini, salads and gelato made in-house. The franchise design team issues a fixed brand package and works directly with the contractor on every location. Our job was to fit that package into a live mall unit, under the landlord's rules, without pushing the opening date.
Menlo Park Mall is at 55 Parsonage Road in Edison and trades seven days a week. The unit sits on the second level in the food-court run, so deliveries, the strip-out and anything noisy had to fit around the centre's trading hours and its loading-dock windows.
We ran it as a single contract covering demolition, framing, drywall, millwork, electrical, plumbing and finishes, with one supervisor on site and one point of contact for both the franchisee and the landlord's construction manager.
